I know how to slow down the beginning and end of a morph but how do I slow down the middle frames?

The speed (or length) of the entire animation together is controlled by the length of the morph (in either frames or seconds) which is set in the Morph Options window. Also, the Frames per Second option in the Timeline Options window has an effect on the apparent speed of the morph.
